Sweet and Sour Enchiladas

A fresh twist on Chinese sweet and sour chicken — Mexican enchilada-style. Combines good for you fruits and vegetables. Who knew tomato and pineapple pair together so well?
Cook time: 25 minutes | Meal type: Main Dish | Serve Hot | Serves 4
Ingredients
4 large chicken breasts (boneless, skinless)
8 large flour tortillas
10oz Wholly Salsa Roasted Tomato
10oz Wholly Salsa Pineapple
2 cups shredded cheese (sharp cheddar, Mexican blend, or Monterey Jack)
Directions
Prepare Shredded Chicken*
Place chicken in a large pot, cover with water, and bring to a boil. Reduce temperature to medium, cover pot, and continue boiling for 30-40 minutes. Let chicken cool thoroughly, then shred using two forks.
Prepare Enchiladas
Preheat oven to 350 F. Lightly spray a 13″ by 9″ glass or ceramic baking dish with cooking oil to prevent sticking.
Combine shredded chicken, roasted tomato salsa, and 1 cup cheese. Top each tortilla with about 1/3 cup shredded-chicken mixture.
Roll up tortilla and place seam side down in prepared baking dish. Repeat with remaining tortillas and chicken mixture. Spread tops of enchiladas with pineapple salsa.
Bake Enchiladas
Cover baking dish with foil and bake 15-20 minutes. Remove foil; sprinkle with remaining 1 cup cheese. Bake 5 minutes longer or until cheese melts.
Note
*Can substitute rotisserie or canned chicken to save time.
Serving Suggestions
Refried beans, Mexican or Spanish rice, and/or tortilla chips with guacamole or salsa.
